Cooking with Claire: Shrimp Tacos with Avocado Cilantro Crème Fraîche


Sunday evening after my fun afternoon hanging with Viv (Auntie L and Viv QT = Drewski and Silla had time available to do some yardwork they’d been wanting to get done). Oh, and if you weren’t already aware, Drewski and Silla are my brother, Drew, and sister-in-law, Lauren.

I just completely birdwalked….back to the shrimp tacos…Sunday evening after my Viv time, I went to Claire’s for dinner. Her best friend from college was en route for a visit, and I was joining them for a bit of a Sunday funday, which lucky for you, I documented her fantabulous cooking skills (and me too, because I will definitely be making it again).

This was, in all honesty, a pretty easy dinner when all is said and done. Easier for me since I was sitting at the counter giving her the recap of the weekend while enjoying a Lime-a-Rita. (Claire had been visiting her boyfriend over the weekend). Don’t think I’m rude for not helping. She wouldn’t have let me if I’d asked. The kitchen is her domain. Granted, I love to cook, and I’m pretty good at it if I do say so myself. Actually, I’m a little upset with myself for not having gotten a cooking post up in October, but you’re about to get several over the next few weeks because of various events, so I’ll make up for it. Claire is a fantastic cook, and ALWAYS healthy. I usually learn something new watching her cook. She is very, very knowedgable about what can take the place of many less than healthy ingredients without sacrificing the quality and taste of the food.


Anyhoo, birdwalked again…the shrimp tacos… The cool thing about this was that most everything is prep-able ahead of time. She peeled and seasoned the shrimp, chopped the tomatoes, and chopped the cabbage and doused it with lime juice, and then put them all in the fridge.


For the Avocado Cilantro Crème Fraîche –

In a blender, shake mixer, magic bullet or other small mixing appliance of choice add:

  • ½ cup plain, nonfat, greek yogurt
  • Zest of one lime
  • 2 pinches of salt (or to taste)
  • 2 pinches freshly ground black pepper (or to taste)
  • 4 TBSP Almond Milk
  • ¼ tsp minced garlic
  • ½ a bunch of cilantro, roughly chopped
  • ½ Avocado, cubed

Blend until smooth. Cover and refrigerate until time to serve.




She was using the GE Single Serve Blender (left). I also have the same blender at home and I love it. I use it all the time for shakes, and have used it for salad dressings, but had not thought to use it for this…I’m excited to try it.

For the Shrimp –


Peel, devein if desired, and season or marinate for tacos as desired. Claire used:

  • Salt
  • Pepper
  • Cumin
  • Red Pepper Flakes

Lightly coat a medium saucepan with olive oil cooking spray and cook the shrimp until pink – just until there is no gray left. DON’T OVERCOOK!! Shrimp don’t take very long!!


For the “taco builders” –


  • Chopped tomatoes
  • Chopped cabbage
  • Grated cheese (Claire used a mango habanero jack)
  • Avocado chunks or slices (1 ½ avocado total)
  • Corn tortillas (steamed in the oven for a few minutes)


Before serving –

Re-blend the crème fraîche briefly just to mix up again, add more zest and/or cilantro if desired.

Then, make your tacos!

I must say it was DELICIOUS. Making me hungry typing this post!!!

Grocery List for this recipe:

  • 1 small head of purple cabbage
  • 1 bunch of cilantro
  • 1 lime
  • 2 avocado
  • Minced Garlic
  • 1 lb. of shrimp
  • 1 pint of grape tomatoes or 1-2 medium tomatoes (depending on tomato popularity)
  • Salt, Pepper, Cumin and Red Pepper flakes if they are not already in your spice cabinet/shelf/drawer
  • Greek Yogurt (1/2 cup)
  • Cheese of choice (grated or to be grated)
  • Almond Milk (4 Tbsp needed)
  • Corn tortillas

Serves 3-4
