A few weeks ago, one of the fall flavors I featured was cranberry, and I mentioned my Granny’s Cranberry Salad in the post. However, I didn’t want to share the recipe without her permission. Well, I talked to my sweet and sassy Granny, and she said I was welcome to share! Hoorray for y’all!
I have already made this recipe three times this year and it’s not even Thanksgiving!
It’s easy, delicious, and a tart & sweet twist on the ol’ canned cranberry sauce, plus it’s purdy!
Anyhoo, enough about it already right? Here’s the recipe…
Here’s what you’ll need:
- 1 small pkg orange jello
- 1 large pkg cherry jello
- (or two small)
- 1 med can crushed pineapple with juice
- 1 med can mandarin oranges or 2 small
- 1 med apple, chopped
- 1 pkg cranberries
- 1 c. pecans
- 1 ¼ c. sugar
Prepare the jello with only the hot water. (3 cups) Stir until jello is completely dissolved in a large bowl or serving dish. It’s a beautiful addition to a holiday table in a clear or cut glass dish.
In a food processor (or I used the Vitamix and pulsed 55-60 times), combine the pineapple, sugar, cranberries, and pecans. I have used a food processor in the past, but I have had to do it in two batches.
Add the pineapple mixture to the jello and stir to mix.
Chop the apple into bite sized pieces and add to the mixture.
Drain the mandarin oranges (they don’t have to be dry, just get rid of the majority of the liquid), and add to the mixture.
Stir well so the whole salad is evenly mixed.
Chill for 6-8 hours and serve!
Less than a week until Thanksgiving!! Happy Friday!
